Ingredients

For the Potato Chips

  • 1 russet potato
  • Olive oil
  • Salt
  • Black pepper

For the Ground Beef Mixture

  • 1 lb 93/7 ground beef
  • 3 tbsp low-fat mozzarella cheese
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 cup diced dill pickles
  • 1/2 yellow onion, finely diced
  • Salt and black pepper, to taste

For the Burger Sauce

  • 2 tbsp plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp pickle juice
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • Dash of salt
  • Dash of black pepper

Instructions

1. Make the Potato Chips

Preheat your oven to 400°F.

Using a mandoline slicer, thinly slice the russet potato into even rounds. Arrange the potato slices in a single layer on a baking sheet.

Lightly coat with olive oil and season with salt and black pepper.

Bake for 15–20 minutes, or until the potato slices are golden brown and crispy.

2. Cook the Ground Beef

While the potatoes are cooking, finely dice the yellow onion.

Heat a skillet over medium-high heat and add the onions. Cook for 5–7 minutes, stirring occasionally, until they begin to brown and develop color.

Add the 93/7 ground beef and cook, breaking it apart as it browns. Once the beef is almost fully cooked, add the Worcestershire sauce and mustard. Season with salt and black pepper and stir everything together.

Once the beef is fully cooked and well combined with the onions, sprinkle the low-fat mozzarella cheese over the top. Allow it to melt into the beef mixture.

3. Make the Burger Sauce

While the beef cooks, combine the Greek yogurt, light mayonnaise, ketchup, mustard, pickle juice, garlic powder, Worcestershire sauce, salt, and black pepper in a small bowl.

Whisk until smooth and creamy.

4. Assemble the Loaded Cheeseburger Chips

Remove the crispy potato chips from the oven.

Top the chips with the cheesy ground beef mixture, followed by the diced dill pickles.

Drizzle generously with the homemade burger sauce.

Serve immediately while the potato chips are hot and crispy.

Tips

  • Slice the potatoes as evenly and thinly as possible so they cook at the same rate.
  • Don’t overcrowd the baking sheet. Giving the potato slices space helps them crisp up.
  • For extra cheeseburger flavor, add a little more pickle juice to the burger sauce.
  • Serve immediately after assembling so the potato chips stay crispy.
