If you’re looking for a dinner that checks every box—quick, comforting, minimal cleanup, and full of bold flavor—this One-Pot Chicken Sausage & Rice is exactly what you want. Made with spicy Italian chicken sausage, tender vegetables, aromatic garlic, and fluffy basmati rice, it’s a hearty meal that tastes like it simmered all day (but really comes together in under 30 minutes).
Everything cooks in one heavy pot, so the rice soaks up the smoky paprika, savory sausage drippings, and veggie-rich broth. The fresh burst of tomato, parsley, and green onion at the end pulls the entire dish together with color and brightness. It’s simple, satisfying, and perfect for busy weeknights.
Ingredients
- 1 package spicy Italian chicken sausage, sliced into discs
- ½ red onion, thinly sliced
- 1 red bell pepper, diced
- 3 cloves garlic, chopped
- 1 cup basmati rice (uncooked)
- 1 tsp paprika
- 2 ½ cups chicken broth
- 4 green onions, sliced
- 1 tomato, chopped
- 2 tbsp parsley, chopped
- Avocado oil (for sautéing)
- Salt & pepper, to taste
Instructions
1. Prep the sausage
Slice the chicken sausage into discs and set aside.
2. Sauté the veggies
Heat a heavy pot over medium-high and add a drizzle of avocado oil.
Add the sliced red onion and cook for 6–7 minutes, until softened and starting to develop color.
Stir in the diced red bell pepper and cook for another minute.
Add the chopped garlic and cook for about 30 seconds, just until fragrant.
3. Brown the sausage
Add the sliced chicken sausage to the pot and cook for a few minutes, letting it brown lightly and mix with the veggies.
4. Season
Sprinkle in the paprika and stir to coat everything evenly.
5. Toast the rice
Add the uncooked basmati rice and stir for about 30 seconds.
This helps the rice absorb flavor and prevents it from getting mushy.
6. Deglaze
Pour in ½ cup of the chicken broth and scrape up any browned bits from the bottom of the pot.
Those little bits are pure flavor.
7. Simmer
Add the remaining broth and bring to a gentle boil.
Reduce heat, cover, and simmer for 12–15 minutes, or until the rice is tender and the liquid is fully absorbed.
8. Finish with freshness
Turn off the heat. Stir in the chopped tomato, parsley, and sliced green onions.
Taste and adjust with salt and pepper as needed.
Serve It Up
Scoop into bowls and enjoy warm. This one-pot meal reheats beautifully, making it perfect for meal prep or leftovers the next day.
